The Recipe
Ingredients
Sweet potato, peeled, 250 g
Lentils, canned, drained and rinsed, 400 g (1 can)
Curry paste, korma, 1 tablespoon
Spring onion, 4 onions, sliced
1 raw egg
White breadcrumbs, 1/2 cup
Olive oil spray (I used canola, worked just as good)
Cooking Instructions
- Peel sweet potato and cut into medium sized chunks. Microwave on high for 6 minutes or until tender. Mash with a fork to make 1 cup. Refrigerate to cool.
- Preheat oven to 180 degrees C.
- When sweet potato has cooled, combine all ingredients in a medium bowl using hands.
- Roll mixture into 4 (large and thick) or 6 (thinner) patties.
- Place patties on an oven tray and flatten slightly more. Spray with oil and bake for 15-20 minutes or until golden brown.
- Serve immediately or cool and freeze for later.
My Thoughts
I made these the other night and was amazed at how huge they were when only making 4. They are extremely filling, and tasted pretty good when served in a wholemeal roll with a spread of hommus, some sweet chilli sauce, cheese and salad. There is no way you could possibly finish two of these, I made some for Brett last night and he got through one and a half before he had to stop.
The korma gives it a real nice edge that really made it come together.
These patties, when making 4 from this recipe, contain a mere 233 calories per patty, making these an awesome healthy vegetarian dinner.
